Step-by-Step Cooking Method

1

Step 1

~15 mins

Knead stiff dough with coarse wheat flour, semolina, ajwain, salt, and 4 tbsp melted ghee. Shape into smooth round balls (baatis).

2

Step 2

~30 mins

Bake in preheated oven or traditional tandoor gas oven at 190°C for 30 minutes, turning once until golden brown and cracked on top.

Chef Note: Cracks on the top of the baati are the hallmark of perfect texture.
3

Step 3

~15 mins

Pressure cook soaked mixed lentils with turmeric and salt. In a separate kadai, prepare tadka with ghee, cumin seeds, hing, ginger, Mathania chilli powder, and Dal Baati Masala.

4

Step 4

~10 mins

Pour sizzling tadka into the cooked dal. Crush hot baatis lightly and immerse fully in warm desi ghee before serving.

Chef Note: Crush 2 baatis and mix with powdered jaggery and ghee for instant rustic churma.
The AAXOL Spice Golden Rule

Never Overheat Ground Aromatics

Whole spices (like cumin, mustard, cardamom) thrive in sizzling oil to crackle their essential oil vesicles. Stone-ground powders should be added only after onions/tomatoes are softened, or mixed with a dash of water to avoid scorching the delicate volatile flavour compounds.
