Aged Basmati Rice
500g
Chicken or Mutton pieces
750g
Hyderabadi Biryani Masala
2.5 tbsp
Idukki Green Cardamom
6-8 pods
Kashmiri Mongra Saffron
15-20 strands
Ceylon Cinnamon Sticks
2 inch stick
Black Peppercorns
1 tsp
Fresh Mint & Coriander leaves
1 cup chopped
Pure Desi Ghee
4 tbsp
Fried Onions (Birista)
1.5 cups
Thick Whisked Curd (Dahi)
1 cup

Step-by-Step Cooking Method

1

Step 1

~15 mins

Marinate the meat with curd, Hyderabadi Biryani Masala, ginger-garlic paste, mint, fried onions, and 1 tbsp ghee for minimum 2 hours.

Chef Note: For deep flavour infusion, overnight marination in the refrigerator gives restaurant-level tenderness.
2

Step 2

~10 mins

Soak saffron strands in 4 tbsp warm milk. In a heavy bottom vessel, boil 3 litres water with cardamom, cinnamon, cloves, and salt until bubbling aromatically.

Chef Note: The water should taste pleasantly salty like seawater so rice absorbs flavour evenly.
3

Step 3

~8 mins

Boil soaked basmati rice until 70% cooked (grains should bend without snapping). Drain immediately.

4

Step 4

~7 mins

Layer marinated meat at the base of a heavy handi. Spread 70% cooked rice over it. Drizzle saffron milk, remaining ghee, fried onions, and chopped mint.

5

Step 5

~40 mins

Seal lid tightly with wheat flour dough or heavy foil. Cook on medium flame for 10 minutes, then place on a hot iron tawa on low flame for 30 minutes for gentle dum.

Chef Note: Let rest unopened for 15 minutes before gently fluffing from the side with a flat ladle.
The AAXOL Spice Golden Rule

Never Overheat Ground Aromatics

Whole spices (like cumin, mustard, cardamom) thrive in sizzling oil to crackle their essential oil vesicles. Stone-ground powders should be added only after onions/tomatoes are softened, or mixed with a dash of water to avoid scorching the delicate volatile flavour compounds.
